Ice Harvest Then, Ice Cubes Today

Ice companies existed long before the introduction of modern refrigeration. Ice was cut in large blocks from nearby rivers or lakes in the winter and stored in icehouses, that were insulated with sawdust. In the warm summer months, the blocks of ice were then delivered by the iceman, whose wagon was a common sight on the streets of the cities. The ice provided limited refrigeration for perishable foods.  With the invention of modern refrigeration, harvesting ice quickly disappeared.

The end of one era led the way for the beginning of another ... Packaged Ice. The packaged ice industry grew quickly with the increasing trend towards chilled beverages which established the "bag of ice" as a food product that is readily available today in almost every grocery and convenience store.
